Spinach and Egg Stir-Fry
Ingredients:
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1/2 pound fresh spinach, washed and drained
- 2 eggs, beaten
- 1 teaspoon soy sauce
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
Instructions:
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the minced garlic and stir-fry until fragrant (about 30 seconds).
- Add the spinach to the pan and stir-fry until wilted (about 2 minutes).
- Push the spinach to one side of the pan, add the beaten eggs to the open side, and scramble them lightly.
- Once the eggs are set, mix them with the spinach.
- Season with soy sauce, sesame oil, salt, and pepper.
- Serve hot with rice or noodles.
