Spinach and Egg Stir-Fry
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 pound fresh spinach, washed and drained
  • 2 eggs, beaten
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions:

  • Heat the vegetable oil in a wok or large skillet over medium-high heat.
  • Add the minced garlic and stir-fry until fragrant (about 30 seconds).
  • Add the spinach to the pan and stir-fry until wilted (about 2 minutes).
  • Push the spinach to one side of the pan, add the beaten eggs to the open side, and scramble them lightly.
  • Once the eggs are set, mix them with the spinach.
  • Season with soy sauce, sesame oil, salt, and pepper.
  • Serve hot with rice or noodles.
